Easy Low Carb White Chicken Chili

This is super easy and delicious, and great for feeding a crowd. It is keto and THM-S if you are interested in those types of recipes

Cook time:  15 minutes hands on, 8 hours total

Ingredients:

  • 2 1/2-3 pounds boneless skinless chicken breasts
  • 1 large onion, diced
  • 4 10 oz. cans diced tomatoes with green chiles (e.g. Rotel), not drained
  • 1 15.5 oz  can black beans, rinsed and drained
  • 1 15.5 oz can whole kernel corn, not drained
  • 2 cups heavy whipping cream
  • 2 packets dry ranch seasoning mix
  • 1 T ground cumin
  • 1/2 T chili powder
  • 1/2 T garlic powder
  • 1/2 T salt
  • 2 8 oz. packages cream cheese
  • Green onions, sliced (optional)

Instructions:

  1. Place chicken in the bottom of a 6 quart crock pot.
  2. In a large bowl combine all other ingredients except cream cheese
  3. Pour mixture over chicken
  4. Top with cream cheese packages
  5. Cook on low for 8 hours, or until chicken is cooked through
  6. Remove chicken and shred
  7. Stir remaining crock pot contents
  8. Stir shredded chicken into the mix
  9. Serve garnished with  green onions
