Peanut Butter Toast w/ Strawberries

In order to have a day filled with healthy choices, I have to get it right from the start.  The trouble is I am not a morning person and it is all too tempting to grab something not great for the sake of eating.  Having quick and easy go to breakfasts is crucial and this is one of my favorites.  If you’re into any of these special eating plans, it has the following values:

  • THM – C
  • WW –  4.5 points
  • Beachbody containers: 2 yellow, 1/2 purple, 3 teaspoons

Cook time:  10 minutes
Servings:  1

Ingredients:

  • 2 slices whole grain bread
  • 1 T natural peanut butter, no sugar added
  • 1/2 cup strawberries, sliced

Instructions:

  1. Toast the bread to your desired crispiness
  2. Spread peanut butter evenly over both slices
  3. Place strawberries evenly over the slices
  4. Enjoy

Tip:  While fresh is my very favorite, keeping frozen strawberries on hand makes this breakfast especially quick and convenient, easily made on a whim.  I quickly thaw them the morning of, or throw them in the refrigerator overnight so they are ready to slice for this recipe.
