Make Ahead Freezer Quinoa Black Bean Burritos

This one takes some time, but is fantastic if you need quick and easy grab and go lunches.  Make the big recipe today, have plenty of meals ready for weeks to come. 

Cook time:  Making ahead – 45 min hands on, 11 hours total; preparing to eat – 10 minutes total

Servings:  36

Ingredients:

  • 2 large bell peppers (any color), chopped
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 cup quinoa, rinsed well
  • 2 cups water
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2-3 limes, juiced
  • 4 (15.5 ounce) cans black beans drained and rinsed
  • 2 (15 ounce) can pinto beans drained and rinsed
  • 2 (15 ounce) can whole kernel corn, drained
  • 2 (10 ounce) can diced tomatoes with green chilies, drained
  • 1 pound shredded Colby jack cheese
  • 1/2 cup fresh cilantro, chopped (optional)
  • 36 (10 inch) whole grain tortillas
  • Salsa (optional)
  • Hot sauce (optional)
  • Light sour cream or plain Greek yogurt (optional)

Instructions:

  1. Make ahead: combine olive oil, bell peppers, onion, and brown sugar in a small crock pot. Cook on low 10 hours. *When this is done, you can store these in the refrigerator up to 4 days if you are not ready to prepare the burritos.
  2. Rinse the quinoa thoroughly in a mesh strainer
  3. Combine quinoa and water in a medium sauce pan, bring to a boil, reduce heat to low, and allow to cook uncovered for 15 minutes.  Remove from heat, and season with salt and pepper
  4. In a large bowl combine, caramelized vegetables, cooked quinoa, black beans, pinto beans, corn, tomatoes and chilies, and cheese. Pour lime juice over mixture and stir.
  5. Scoop about 1/2 cup of mixture into each tortilla. Wrap tightly, then wrap completely in a paper towel. Place wrapped burritos in an air tight container or a large freezer bag. Store in freezer for up to 4 months.
  6. When ready to eat: Place burrito in its paper towel in the microwave on a microwave safe plate. Microwave on high one minute and thirty seconds. Turn burrito over and microwave an additional 1 minute and 30 seconds. Allow to stand for 5 minutes. Serve with salsa, hot sauce, and sour cream or plain Greek yogurt as desired.
